TunZhihu 10 Years (吞之乎10年(酱香))

Baijiu in the sauce aroma style, made in Guizhou from small-grain red sorghum and local water, following the traditional method of multiple solid fermentations over the course of a year and then aging in clay jars for over 10 years. The nose is clean and elegant, with notes of light soy sauce, dried fruit, and a touch of toast. The palate is full-bodied and round, with subtle umami balanced by light sweetness, revealing layers of fermented grain, spice, and herbs. The finish is long and lingering, typical of the Guizhou sauce style, but with extra smoothness provided by prolonged aging.
