An absolute icon of China, born in Guizhou and made from red sorghum using an artisanal method of multiple fermentations and distillations over the course of a year, followed by aging in clay amphorae. The aroma reveals a characteristic "sauce" style with notes of delicate soy sauce, toasted sesame, dried fruits, and light caramel, enveloped by floral, herbal, and ripe fruit notes. The palate is unctuous and very complex, combining subtle sweetness, salinity, and a pronounced umami tone, with layers of cereal and fine spice. The finish is long, warm, and deeply fragrant. Ideal for serving in small glasses, at a slightly chilled temperature, with rich and spicy cuisine.
